When parents complete their online forms you can give them the opportunity to update their contact details.

This feature is enabled by default, although you can disable it (click User Name > Settings > Configuration).

You can export any contact information that has been updated. Click on Contacts on the left menu, and select Export Updated Contacts from the Action menu on the right hand side.

A pop up window will open, select the date range from which you want the updates and click the Export button.
